French Onion and Leek Soup

When the days get shorter and the temperatures start to fall I get in soup making mode. There’s nothing like a hot bowl of soup with some warm fresh bread on a cold day. So today I’m making French Onion and Leek Soup. I save the leftover bones from a beef roast or the carcass of a chicken or turkey to make soup or stock. If I don’t feel like making some right away, I seal them up in freezer bags and toss them in the freezer for another day.
