Cheesy Soup with Beer

- 1 cup shredded carrot about 1 medium carrot
- ½ cup diced onion about half an onion
- ¼ cup butter
- ¼ cup flour
- 3 cups milk
- 2 cups shredded sharp cheddar cheese
- ¾ cup beer lighter colour is best
- ½ tsp salt
- ¼ tsp pepper
Cook carrot and onion in butter in large saucepan over medium-low heat until softened and onions are golden, stirring frequently.
Add flour. Mix well and cook for 1 minute.
Gradually add milk, stirring until well blended. Increase heat to medium and cook until thickened, stirring constantly.
Reduce heat to low. Add cheese and stir until melted. Stir in beer. Cook just until heated through. Do not boil.
Season to taste with salt and pepper.
