Johnny Cake

A sweet version of cornbread that's served warm with butter and real maple syrup.

Ingredients
  

  • ¾ cup cornmeal
  • 1 cup all purpose flour
  • 1 Tbsp baking powder
  • cup white sugar
  • ½ tsp salt
  • 1 cup milk
  • 2 eggs, well beaten
  • 2 Tbsp vegetable oil

Instructions
 

  • Preheat oven to 400° and ensure rack is set to middle position.
  • Combine corn meal, flour, baking powder, sugar and salt in large mixing bowl.
  • Whisk together milk, eggs and oil. Make a well in the dry ingredients and pour in milk mixture. Stir to combine completely.
  • Pour batter into a well greased 9 inch round cake pan.
  • Bake for 20 minutes or until a test toothpick comes out clean.
  • Serve warm with butter and drizzle with real maple syrup.
