Combine peanut butter, icing sugar, cereal and peanuts if using. Alternatively, use chunky peanut butter instead of adding peanuts. Chill at least 30 minutes.
Roll into similar sized balls and place on parchment lined baking sheet.
To finish, dust with icing sugar or roll in cereal or peanuts. Or, dip or roll in chocolate. Or any combination of your choice.
Store in the fridge in a sealed container for up to one week. Freeze if storing longer. Makes about 4 dozen Peanut Butter Balls.
Notes
Chunky peanut butter doesn't have quite as many peanuts as using smooth peanut butter combined with 1/2 cup chopped peanuts. Feel free to add extra chopped peanuts if using chunky peanut butter.Do not reduce icing sugar, otherwise your balls will be too soft and sticky.
