Is it a cake? Or is it squares? You decide. This one has components of both. The bottom layer tastes like a shortbread cookie covered with custardy rhubarb then topped with a crumbly mixture. There’s just a hint of cinnamon and it’s not too sweet.

I live in Southwestern Ontario in Norfolk County. Located on the north shore of Lake Erie, this area is known as Ontario’s Garden. There’s no shortage of produce grown here and the area also boasts a lively fishing and waterfowl hunting scene. And lately there are more and more wineries and craft breweries popping up. In fact, Lake Erie North Shore and Pelee Island share the same latitude as northern California and Bordeaux, France. A perfect location for a home cook, foodie and wine lover like me!
