Celebrate Taco Tuesday with a healthy twist by skipping the standard tacos and making Taco Salad instead. This salad has all the components of a taco but has loads more vegetables without compromising on flavour. It’s quick and easy to make and much better than takeout because you can customize the veggies to your liking and what’s in season.
I just returned from a trip to St. Jacobs. I hadn’t been to the Farmers’ Market in years. It was a beautiful fall day and there were hundreds of vendors, inside and out. I love the sounds, sights and smells of markets and this time of year is probably the best time to visit one. The fall harvest is in full swing but I didn’t go to buy vegetables. I live in Norfolk County, Ontario’s Garden so I can get fresh local vegetables everywhere. What I was looking for was a nice fresh tuna steak. And I was not disappointed. I couldn’t wait to get home to make Salad Niçoise.
This is a super simple salad that’s bursting with zesty flavour and brilliant colours. And since it’s harvest season, this is the perfect time to make Green Bean and Red Pepper Salad with fresh local ingredients! It’s a perfect companion to a Monte Cristo sandwich because of the balance of flavours and colours.
Have you ever gone to a pot luck and brought Macaroni Salad and a few other people did too? And yours looked sort of lame compared to the others? Me too. You probably just mixed together pasta and mayonnaise. That’s basically a macaroni salad but I learned that you just need to add a few colours, flavours and textures to make sure you’re taking home an empty bowl.
I picked up my CSA share this week from Meadow Lynn Market Garden and made this Strawberry Mandarin Salad with Sweet Onion Vinaigrette. The freshly picked organic mixed greens pair perfectly with sweet local strawberries, mandarin orange sections and a tangy oniony dressing. Adding sunflower seeds adds that crunchy element that every salad needs.
