A simple soup recipe with complex flavour and a cute story. And, a short post.

I know most of you don’t really want to read a long story about a recipe. It’s ok, I get it. You just want to get right to the recipe and start cooking. That’s why I always include a jump to recipe link near the top of each post. But this one is cute. And the recipe is so simple I’m not going to make this a long post. Nor am I including a jump to recipe. On purpose.

I mention on my “about me” page that I worked in Adult Education. One of the programs I supervised was an adult literacy class. These folks were working on improving their life skills and often used cooking as a fun way to learn math. And of course an excuse to eat at school! One student in particular (I’ll call him “Peter”) was very excited about this soup. Not only because he was proud of his cooking skills but also because they were having beer at school! It’s ok, they were all adults. The students gave me a sample and a copy of the recipe. Every time I visited after that, Peter asked me if I’d made Cheesy Soup with Beer. And of course I had.

The flavour of this soup is similar to cheese fondue. In fact, if you didn’t include the carrots, that’s basically what you’d have. If you’re one of those people who would love to skip the dipping part and just scoop the fondue mixture right into your mouth, this soup is for you! I do like the carrots in this though, not only for the flavour and texture but they also add a little colour.

Cheesy Soup with Beer

A quick and easy hearty soup with beer.

Ingredients
  

  • 1 cup shredded carrot about 1 medium carrot
  • ½ cup diced onion about half an onion
  • ¼ cup butter
  • ¼ cup flour
  • 3 cups milk
  • 2 cups shredded sharp cheddar cheese
  • ¾ cup beer lighter colour is best
  • ½ tsp salt
  • ¼ tsp pepper

Instructions
 

  • Cook carrot and onion in butter in large saucepan over medium-low heat until softened and onions are golden, stirring frequently.
  • Add flour. Mix well and cook for 1 minute.
  • Gradually add milk, stirring until well blended. Increase heat to medium and cook until thickened, stirring constantly.
  • Reduce heat to low. Add cheese and stir until melted. Stir in beer. Cook just until heated through. Do not boil.
  • Season to taste with salt and pepper.
